I have spent a great deal of my life battling illness. I suffered from Crohn's Disease and eventually had abdominal surgery, thwarting the Crohn's and budding cancer cells. Since my surgery in 1995 I have been relatively free from Crohns', although I had several subsequent surgeries related to my ileostomy..When my disease was in remission, I don't think my husband realized how bad it could get, but he has stood by me. I also have suffered from various autoimmune disorders and am diagnosed with Stage IV Kidney Disease. Fortunately, I am maintaining and do not need dialysis at this point. We adopted our son and later found out he had cerebral palsy, so he became my career. Dan has had two surgeries and tons of therapy and is able to walk because of it. He is a college graduate and is employed as an Information Specialist. We are very proud of his accomplishements. I am now part of the retired generation and still getting used to the idea. I do enjoy crafting, traveling and being with family and friends. I am active in my church and feel that the hardships we endure are there to build our faith. I like to live life in the "now" as we never know how much time is left.

A few Recipes and Reviews

 
Lately I have been trying out new recipes....most from facebook.    A fellow blogger suggested that I review some of my recipes (I am not that much into cooking!)  I tried:
Dorito Chicken Cheese Casserole
3 cups cooked chicken, chopped (I used a rotisserie chicken)
8 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 1/2 cups salsa or 1 can Rotel
1 can of corn, drained
2 cups Mexican cheese, shredded
1 bag of nacho cheese Doritos

Preheat oven to 350 degrees.

Lightly spray a 9x13 pan with cooking spray.  Crush the entire bag of Doritos and cover the bottom of the dish.  Reserve one cup of cheese.   Mix together remaining ingredients in a large bow.  Pour chicken mixture over the Doritos.  Bake for 20 min. Top casserole with the remaining cheese and bake 5 additional minutes or until melted.
We didn't care much for this.  Too cheesy, too many doritos, I don't know!  I would like to try it with ground beef or turkey instead.
 
 
 
 
Last night I made Pizza Spaghetti Casserole. Not bad if you are cooking for an army! Next time  I will cut it in half!
 
My family liked it too!  They did suggest a Ziti type pasta instead of the spaghetti.
 


Pizza Spaghetti Casserole 


Ingredients 

1 lb. ground meat
1 16 oz. box uncooked spaghetti noodles
½ teaspoon salt
½ teaspoon oregano
½ teaspoon garlic powder
½ cup milk
1 egg
2 ounces sliced pepperoni
1 (26 ounce) jar pasta sauce
1 16 oz. can diced Italian style tomatoes
¼ cup grated Parmesan cheese
1 (8 ounce) package shredded Italian cheese blend
Any other pizza toppings, you can add like black olives, sausage, onions, green peppers, etc...

Directions: 

Boil water and salt for spaghetti noodles. Once it starts boiling, add noodles. Brown meat in a separate frying pan. When noodles are cooked, drain and put them in a casserole dish.

In a separate bowl, combine milk  and egg, and then whisk. Poor over pasta and add jar of sauce, can of tomatoes, garlic powder, and oregano. Mix all together well.

On top of pasta mixture, layer the ground meat, then add a layer of pepperonis. Sprinkle Parmesan cheese, and Italian cheese. And layer more pepperoni.

Bake in the oven at 350 degrees for 30 minutes.

Those BOTH look good, Deb! I am going to try that Pizza spaghetti soon. You asked about that Parmesan chicken on my blog-I think you could bake it pretty easy. I would just put some melted butter on top so it would get really crispy on the outside.

I saw the one for the spaghetti casserole on Facebook as well. It really does look yummy, minus the pepperoni!!!
